Patrimonio culinario costero y diferenciación territorial en Nayarit, México

Resumen

Este artículo examina cómo el patrimonio culinario costero opera como mecanismo de diferenciación territorial en la costa de Nayarit, México. A partir del registro sistemático y la codificación de 100 menús de establecimientos formales en cinco municipios (enero–diciembre de 2024), se identificaron ingredientes, técnicas culinarias y configuraciones de la oferta gastronómica. Con esta información se construyó el Índice de Platillos Costeros Locales (IPCL), un indicador diseñado para estimar la presencia relativa de repertorios tradicionales frente a opciones estandarizadas de circulación internacional. El análisis combinó clasificación de platillos, comparación de precios promedio por establecimiento y aplicación de pruebas estadísticas no paramétricas para contrastar patrones entre municipios. Los resultados muestran un gradiente territorial nítido: Bahía de Banderas concentra precios más elevados y una oferta más globalizada, mientras Tecuala y San Blas preservan mayor anclaje regional en torno a pescados y mariscos; Compostela y Santiago Ixcuintla presentan configuraciones intermedias con combinaciones híbridas. Se observó además una asociación positiva entre la proporción de platillos globales y el precio promedio. La discusión interpreta los menús como mediaciones culturales donde se negocian autenticidad, mercado y sentido de lugar, y plantea que el IPCL constituye una herramienta replicable para analizar la relación turismo–gastronomía–territorio. Se derivan implicaciones para políticas de abastecimiento responsable de recursos marinos, salvaguarda de saberes culinarios locales y diseño de estrategias de turismo gastronómico orientadas a reducir asimetrías territoriales en la distribución de beneficios.
